M3 auto focus or touch/tap focus?

Over the weekend we attended a family wedding reception and the results were disappointing. What works for you when shooting moving subjects/people with the M3?
Had the 580EX attached and this was with the 18-55. The room was pretty bright so focus generally was pretty quick. Face detect + tracking, one shot was on and when it indicated focus with the green boxes these covered the subject matter. Sadly what I found was that it took the contrast of the person and background favoring the background mostly. Focus missed sometimes as much as 3-10 feet.
Learning process for sure. One of my relative's with the M3 suggested to use the tap focus. Would servo mode and or continuous been better?
