I agree than the 1" zoom compacts are the best compromise for travel, and there is a good roundup of that category of cameras. That being said, if you want the best IQ you won't be carrying a small pocketable camera.
It depends on what lens you are putting on your camera. If it is the EF-M 15-45mm f3.5-6.3, an LX10 or G7X II will have a 2/3 stop low light advantage, roughly.
Conversely, the ZS100 is 1 to 1.5 stops behind an M5 with the EF-M 18-150mm f3.5-6.3. But only one of those fits into a pocket.
Make sure you look at how the aperture changes over the zoom range. I found the G7X m2 to be better than those two because it has a faster lens. The ZS100 has more zoom, but that extra zoom gets you a slower lens over the normal focal lengths. While LX10 has the same aperture range, the Canon stays faster longer. I do like the aperture ring on the LX10.
If video matters, the Panasonic cameras are much, much better.
Just a thought... For almost the same money as an M5 with the 18-150mm, you could buy the G7X II AND a ZS100. Those two cameras would give you better low light, better range, and better video in a package that is smaller and lighter than the M5 and 18-150mm
I would say those are a little too redundant in focal lengths. IMO, a better combination would be the G7X and something like the G3X or FZ1000. That way you have your convenient pocket camera for the evenings and a capable long zoom for the day. Its a similar theory to carrying two lenses.
Having a pocket camera like the G7X means you don't need you longer zoom camera to be super small.
