I also came from a Canon 5D3 and 7 L-lenses. To reduce potential regret, I would go for the X-T2 with 18-55.  Then follow Greg's lens buying plans.

The X-T2's EVF is so awesome.  I really love a dedicated joystick for AF point selection.  Having WR doesn't hurt.  If you later need it, you can buy a battery grip with portrait orientation controls, which you can't do with the X-T20.  It also has Fujifilm's best continuous AF and 4K video shooting capabilities.

The X-T20's advantages are the significant up-front cost savings and smaller size.  If you end up going full Fuji-X, you can always buy a used X-T2 in a year or two.

If you do decide to go X-T20 I can see going 23/2 and 50/2 over just the 56/1.2.  But, if you are in love with the Canon 85L, you got to get the 56/1.2.
