I'd use S mode, pick the shutter speed with what look you want by looking at a 'good' old photo from old pics eg 1/125 maybe ? shows some movement but should still freeze it enough and then use Auto ISO up to say 3200 (or 6400 looking at some of the noise on A99ii shots on here) and let the f stop do the work.

Later on play with using M and  then set the aperture for the DOF you're looking for  and using auto ISO in M mode, adds a whole new dimension to your control IMO
