Yes it is possible to recover 2 stops in post processing, but it is a myth that you get the same result as a properly exposed shot. If you compare a properly exposed sky to the same one shot 2 stops overexposed and then corrected in LR or Photoshop, they will not look the same. The corrected sky is usually less saturated, has less contrast, and sometimes the hue is different. Thus, since my usual  reason for bracketing is to blend (most often with luminosity masks) a sky and land, I prefer to have a sky that is close to properly exposed. If I were to bracket using 2 stop increments, I probably would frequently miss that exposure.
