Lens consolidation - panoramic to replace ultra wide angle?

I am curious to hear from anyone who has consolidated their lens assortment to simplify their load and streamline their shooting. When it comes to my gear, I gravitate to the notion that less is more, especially since I tend carry my full kit with me at all times in a single messenger bag. Here is what I have today:

  1. XT2
  2. 35mm (F2)
  3. 10-24mm
  4. 18-55mm
  5. 55-200mm

My idea is to replace both the 10-24 and 18-55 with the 16-55 instead. Yes, its a big/heavy lens, but not as much weight and space as the other two combined. More importantly to me, I would be changing lenses less often. For the times I need to go really wide, I was thinking I could just stitch together multiple pano exposures in post to cover those missing 6mm. Has anyone else gone down this particular path, or am I being naive?

A second, related question: for those who own the 16-55, how low can you go with your shutter speed while handheld, and still maintain sharp images?
