For Nikon D500, I've to wait to have enough money. But I can buy D7200 right now. I'm confused between D7200 & D500 or whether I should even upgrade?

The D7200 focusing system can be found in the D5500 and D5600 too.

Your 200-500 Nikon might benefit from the AF fine tuning available with the D7200 and above. If you had a Sigma or Tamron it would not matter as those lenses can do AF fine tune internally.

Apart from the D500's action AF ability, which matters a lot more to some bird photographers than others depending on whether they do a lot of in-flight photography, it also is the only DX camera with EFCS, which could improve critical image blur by reducing the effect of shutter vibrations. Probably a minor consideration.
