This works, sort of. I set the M-Fn button to turn off the display, and it did, until I used the EVF. When I removed my eye from the EVF, the display came back on.

This custom setting turns off the display temporarily, but if the original poster wants to turn it off for good, I'm not sure that's possible.

Exactly right.  The EVF resets the button.  I've lived with it set this way for a couple of months and having the screen / M-Fn switch right next to the shutter works for me, and the EVF restting bit is appreciated in practice.
