ultimately it doesn't matter when I'm lying on my death bed but it would be nice to satisfy my curiosity

We all chip in to help you eventually have a peaceful death.

The 80D and the M5 are not two Canon APS-C cameras today that sport 24MP sensors. There are also the T6i, T6s, T7i and 77D. (Ditto with Nikon: D3200, D3300, D3400, D5200, D5300, D5500, D5600, D7100 and D7200 all have 24MP sensors.)

While the situation is a bit more transparent on the Nikon side, I strongly doubt that "the same" 24MP sensor is used in all relevant Canon offerings, in particular 80D and M5.

Most ordinary mortals talk about "Intel Core i7 processor" as if it was the one chip, but in actuality there are hundreds of variations targeted at different product applications. The situation is similar with "Canon 24MP sensor": there are variations -- not only in terms of physical dimensions but also in terms of many performance and reliability requirements.

I recall that, years ago, when I was active in product engineering and manufacturing, our teams were doing cost analyses (huge, complex spreadsheets) on the basis of cents -- yes, cents. (By the way, l've gathered that Tim Cook of Apple used to carry such spreadsheets actively in his head.) With that as background, you will be less inclined to think that "the same" 24MP sensor is deployed in different camera products of different characteristics and targeted for different price points.
