RX100 V HFS questions (BUFFERING???)

I'd appreciate some help in figuring out how to shoot HFS correctly on this camera.
I'm a Pentax DSLR user (currently the K-3 II) who just recommended and purchased, for my employer, a RX100 V. I bought it completely for its SLO-MO capabilities. I'd like to shoot for 7 seconds (Shooting Time Priority) at 240 fps. I got the Sony RM-VPR1 (wired) remote for it.

First of all, is there a proper manual for this thing? The little 42 page "Instruction Manual" does NOT cut it, but it is all I can find.

Here is the surprising thing (that makes the camera worthless to me, unless there is something I don't understand about this). When I start recording, I get a BUFFERING message for about 5-6 seconds before it appears to start recording.

Is it recording during that BUFFERING message or is there a delay for the start of recording? I need it to start recording the moment I press the remote. Is this possible?

Thanks in advance for any info.
