However, I wonder if a compact mirrorless could be the in-between and also qualify for the photo class since you can do full manual on it.

There are compacts, like the Sony DSC-HX80 that I mentioned and the older Canon SX230 HS that I have, that "can do full manual", if by that you mean manual control over focus, sensitivity / gain, shutter speed, and (to a limited extent) aperture. Whether one would want to use one of those for a class is another issue.

As for compact, the Sony A6000 with the very small (but mediocre) 16-50mm kit lens is still available new, and cheap.
