I recently got a refurb T6i and would like to see the shutter count. I have looked around and it doesn't seem to be readily available,

in the end the number doesn't matter. You've already bought it. If the shutter breaks , it breaks. It's never fruitful to pay to prematurely replace the shutter especially on Rebel.

Thank you.

^^ Agree with this. Just get out and enjoy the camera. The T6i is a very good model in the Rebel lineup, and more than likely the refurb you bought (especially if direct from Canon), will likely have a very low shutter count (in many cases under 500).

Be sure to show us shots that your are taking with your new toy!
