If it were me, I'd take the 16-55f2.8 and the 50-140f2.8. I think f2.8 will be fast enough. The 50-140f2.8 would be what I would take to a luau in the evening. I was able to get some stunning images with that equivalent on my Canon body. 140mm isn't going to be enough length for getting good photos of surfers unless they are really close to shore. I used a 100-400mm lens for surfers and at times that wasn't even enough. If you aren't planning to do so, you should also take a small travel tripod. You'll want it for shooting streams and waterfalls. If you get a chance, also go to the top of Haleakala in late evening to watch the sun set and stay an hour later to see the stars (bring warm closes) and photograph them too. I've read that's the 4th best place in the world for telescopes and you'll see why if you go.
