Screen3 is the minimal setting, as you say you like it with nothing on.  If it did have settings on it wouldn't be the minimal screen!

Using screen3, and assuming you are in your preferred Aperture Priority setting, turn the front dial.  The dial changes the aperture AND displays all the other parameters, ISO, EC, for you to change.  Make changes as you see fit and the screen reverts back to screen3 - the minimal one.
