Canon G9X minimal screen mode useless?

I just purchased a G9X and I've got a question about the custom screen modes.

I like a "minimal" screen with nothing on it, so I prefer using the Custom Screen 3 (no info screen). But in this mode it also seems that it's impossible to set much of anything when you shoot (I mostly shoot in aperture priority mode.)

I notice when you're in this screen no shooting info appears until you half-press the shutter. Then, the shutter speed, aperture, exposure compensation, and ISO settings appear at the bottom of the screen. When you release the shutter, they disappear. Since they can only be set with the touchscreen, how can you tweak one of them in this screen mode?

I know that you can assign one of them to the control ring but that still leaves you out in the cold for the others. If I set the ring to control aperture, how can I tweak exposure compensation?

It seems that the only way you can get full access is by selecting the "everything" screen display, which is extremely cluttered.

Any ideas?
