With the Canon T3I (600D) camera, you could experiment using Manual Mode with a fixed shutter speed and fixed aperture (for the depth of field).  Then use auto-ISO.  Once you have an idea of the ISO requirement for the shutter speed and aperture, then you can switch to using manual mode with fixed settings for shutter speed, aperture and ISO.  If the lighting changes a lot back and forth you may want to keep using auto-ISO.  But with that way, you will not be able to use exposure compensation.  If you want to use exposure compensation, then you can change to aperture priority (Av) with a fixed aperture and auto-ISO.  The shutter speed will be dependent on the lens focal length.  You can experiment with that and see if that fits your needs.  You can do similar things with shutter priority and auto-ISO as well.
