Which advanced mode for wildlife?

Hi Friends,

I have canon 600d and Canon 100-400mm is II lens for wildlife photography. I am always confused between manual mode and Aperture priority mode. Few experts suggest manual mode for full freedom, and few are in favor of AV mode (Canon).

Till date, I have been using manual mode be it ground shots, steady shots or birds in flight. I know that there are limitations around 600d fps and all, but its ok for now. However, sometimes I get average - good shots and many a times it is grainy or hazzy shots too. I tried AV mode once, but I was not getting shutter speed anywhere near to 1/1000. It was between 1/10-1/100 max. May be, I am going wrong somewhere.

Which advanced mode do you guys suggest - Manual or AV? And, if you can help me with settings to be kept for small, big birds and birds in flight?
