COMING FROM CANON 5D-III doubts to switch to Fuji X-T2 or Sony A7R-II

Hi, I'm a full time photographer I shoot for stock, travel, portraits, fashion and product. My clients are not demanding a Hassleblad or Captureone medium format sizes but I'm having some needs now about changing or not my existing Canon and switch to another system.
I have several Canon lenses but 24-70 f2.8-II is my workhorse for general purposes and studio and fashion and fast photography or even kids I use to set my 70-200 f2.8 is - II
specially my 24-700 is my all in one lens I could travel with it and having 95% of my needs covered, sometimes I shoot 2 images and I merge as a panoramic if a widest lens is needed, another times I bring my 16-35-II wich is not my favorite lens.
Having something like a 24-70 should be a must because let me go from a little wide to a little tele and remain around the 50mm which is a very usual focal for my working style.
I do not use high iso, sometimes at indoors I push to iso 400 or 800 never more, my clients do not enjoy with bigger noise. so I'm a 100 iso shooter and Usually f5,6 to f8 apertures as much as is possible.
Then I would like to travel a little lighter of weight and if possible walk one step higher than what I have now. For a portable camera, I understand the FF Sony is enough more weight friendly than my Canon FF.
my doubt is about how worrst of better would be the same landscape at the same time and light and similar lens for example my 24-70 and a Fuji 16-55 or 18-55 . How would I feel the resolution of a high end latest APSC compared to a some years old FF technology. I don't know if what I get in more portable would be one step down when I check the Raws
Soy has the A7rII there but I'm unsure to get a 24-70 or similar for a logical budget.....
I would love comments from people having shoot with the 3 cameras I'm mentioning here.... thanks in advance
