NX30 how to over/under expose stops in manual with auto-iso

Hi,

I recently bought a nice NX30 and I'm trying to improve taking pictures now. With mixed results, but a lot of fun.

I do run into a problem though: in order to learn as much as possible about exposure, depth of field etc I only use manual shooting mode at the moment. I do set ISO to automatic to avoid to much settings with every picture. When I look at the histogram I often decide that the picture needs some over- or under exposure. According to the manual I can achieve this by pushing the +/- button while scrolling the command dial. This does not seem to have the right result, what happens is the camera will adjust the shutter speed while the exposure needle remains at zero.

How can I solve this? Or am I trying to do something here that is not logical?
