That's only true up to a point. For Micro 4/3, 750mm f/5 is still in the "low ISO" territory and you can get by without tracking or stacking. Here's one example of mine, where I was playing safe with shutter speed:

Also, that shutter speed will depend on atmospheric conditions as well.

But as you increase focal length and decrease aperture, things get much less easy. Try shooting at 2600mm and f/22 and you won't be able to stay at low ISO.

As always, better gear makes things easier. In the end, it is not much different to "ordinary" photography. Better glass gets you better results.
