IMHO I would not consider giving your 500D for one of those cameras. It's not just that I currently own and still use my 500D which is a great camera I might add but rather it is my firm belief that if something works within the scope of your ability then there's no reason to change. Yes its true that Nikon does offer better dynamic range with their sensors but the difference as far as I'm concerned isn't reason enough to change brands. Canon cameras have for the most part provided better ergonomics in their cameras which is greatly important when you need to get that perfect shot. It's sort of like typing.
There are some people who prefer typing on an ergonomic keyboard which uses a specific design to separate the right keys from the left and one which I must admit I found quite useful back then. However I never truly learned how to type fluently using one of these keyboards. Rather it was while using a traditional keyboard. My point to all this is; the camera is simply a tool to helping you show the viewer how you perceive the world at a glance. If you find that you're limited in your abilities in any brand then by all means change.
But...I strongly recommend that you seriously consider whether changing to Nikon will improve your skills as photographer.
