I'd venture to guess it might make a visible difference if printing subtle gradients with a (built-in or user-supplied) paper ICC profile with stronger non-linear mapping regions in the gradient of interest.  (In other words, it may depend upon not just the printed content, but the ICC profile / other factors influencing the driver color space input -> output mapping.)

Not having access to Canon's source code, I don't know if the ICC profile application is performed in a 16-bit space.

I can say at work at the moment, I'm assisting with some image manipulation routines wherein maintaining a 16-bit or 32-bit depth per channel may be important.  But, this precision is being maintained for a consumer that is not human.
