It matters.

If you are deciding between 50mm f/1.8 on APS-C and 75mm f/2.7 on full frame, then they are "equivalent". If you are deciding between 50mm f/1.8 and 50mm f/2.7 both on APS-C, The difference is more than one stop. That's a BIG difference. The bokeh balls will all be 1.5 times the radius. There will be 2.25 times more light. It's like being in a room, having one curtain open, and then deciding to open a second curtain.
