XT10, weird grain effect.

Hello all,
let's start with an apologize for the dumb question and if the question has already been answered.

I recently bought a XT10 and equipped with a 35mm f.14 lens. I'm not at all a professional photographer but I'm having tons of fun with it. I often shoot RAW + JPG FINE in order to keep the RAW as a "digital negative" in case I'd like to edit the photo after or else. I've set up a couple of custom profiles for different situation. As I've understood the RAW files come clean, meaning, it doesn't carry on film simulation, noise reduction, shadow tone or else (am I right?) while the JPG is just a jpg so it's directly affected by all the previous changes.
I was going through a couple of shots I took yesterday night of a friend playing the drums. While I like the jpg, the raw files looks like it present a weird grain on his face and some part of the photo. I'm trying to understand if this is due to the fact that the photo is take with a ISO5000 or if this depends on the custom setting that somehow affect the way the photo is taken.
