I have invested quite a bit in Fuji glass, owning 4 primes (23, 35, 56, 90) and two zooms (10-24 and 16-55), plus two bodies, X-T1 and X-T10. I love shooting with them, the design of the cameras and lenses has reignited my passion for photography!

All that being said, I also do video work, of which I still have a bunch of Canon gear, with decent lenses. I would like to invest in some more up to date video-centric mirror less cameras, like the Panasonic GH4 or a Sony A7R2.

My my question is there any way to adapt the excellent Fuji lenses to work on those other systems? If not, how come?

No, it is not possible.

Fuji X lenses are totally electronically operated. It is not possible to focus them or change aperture on them without electronic signals. At present these signals are only available from a X series Fuji camera.

There are other technical issues as well.

I would not hold my breath on future development either.

Exactly so and because the manual focus is clutch operated (basically you are controlling the AF motor), you wont have manual focus either.
