Sunsets and Exposure Compensation v. Spot Metering

I own a Nikon D5300. I will be traveling and plan to photograph beach sunsets (I will be at a location in which the sun will set on the ocean horizon). I intend to use aperture and manual modes, and possibly shutter mode. I am seeking advice on exposure compensation v. spot metering and have a few questions regarding the two. Do these two processes accomplish the same thing? If not, can someone explain the difference between these two approaches and when one would be used over the other? Do you have any recommendations on how to use each of these settings for photographing sunsets (i.e. recommended settings or procedures)? Am I limited to one or other of the settings depending on whether I use M, A, or S mode?

Thanks in advance. I have read up, and have experimented, and am struggling a bit.
