I'm buying my first DSLR and from what I've read the EOS 1200D suits my use, despite seeming to be a bit overkill with 18MP. My only worry was that I couldn't work out what Manual options for white balance it had and am terrified of only having full auto WB.

No reason to be "terrified" of Auto white balance (AWB). It is not perfect, but is more than good enough for general use. The single shortcoming of Canon's implementation of AWB in the EOS line is that it doesn't fully correct under tungsten and fluourescent indoor lighting. But it's not a big deal, it just tends to give a "warm" look, similar but not as pronounced as daylight film did under the same conditions back in the day. When indoors under such light you'll probably use a flash anyway (the built-in or an accessory speedlite in the hotshoe) and AWB will get the flash lighting correct.

Manual options you'll have to set for conditions. There are icon settings for Daylight, Open Shade, Overcast, Tungsten, and Fluourescent. Additionally, the user can create a Custom white balance by shooting a white or calibrated gray card under a specific light.

Finally, shoot RAW and you can forget about the white balance setting altogether since it can easily be corrected in post-processing.  Either single pictures individually, or even in a batch for a group of pics shot under the same lighting.
