M+AutoISO exposure compensation, to an extent, is called "shooting RAW".

When you use compensation with aperture or shutter, you get not just different exposure, but also difference in depth of field and/or extent of motion blur.    When your compensation affects only ISO, you get same exact exposure, and same exact sensor output, with same signal to noise ratio.  Only difference is amplification of sensor output before it is written to a file.

Then, in PP, you just nudge the Exposure slider the way you need.

Canon cameras are definitely NOT ISO-less.   That is, you generally get best results by using ISO that puts your recorded pixel values in the ballpark of where you want them to be.   But if desired compensation is 1 stop or less, you likely won't see a difference.
