Thank you all for your input - it helped me clarify my thoughts and really consider all advantages and disadvantages of each of the two choices
I also took a closer look at the 7D in the process, as well as really thought about what I want to get out of my future camera.
Result?
I ordered the NX1 + 16-50S + grip + 50-150S (to be delivered tomorrow), a Metz AF-1 / Samsung flash, the 85mm SSA and two extra batteries, all for about 3.800€ delivered.
Now for the bonus question [read: still looking for thoughts]:
I also have an option to buy an extra NX1 body + 16-50PZ lens for 849 EUR - I am VERY tempted because even if Nikon buys the system as rumoured, I am willing to bet they will either:
- forget about the NX mount in which case I might have issues repairing the NX1 6-7 years from now (NB I am not thinking about doubling up on lenses because even if I will have problems with them I assume failed NX1's will result in people putting their corresponding lenses on the market)
- keep the NX mount (unlikely IMO - they need a new mount that supports FF in a thin mirrorless body) and cripple any APS-C Nikon-branded follow-up cam so it does not compete with their FF bodies.
So what do you gents think - should I get the second NX1 body + 16-50PZ or not?

PS. the 849€ for body + 16-50PZ is a special sale from a Dutch online shop - valid for exactly 2h 30min more (i.e. until midnight CET tonight).
Cheaper 2nd body doesn't increase your photography value over the next 5 years at all. Unless you're someone who likes to have 2 bodies.
If your 1st body dies and can't be repaired for some reason, then I'd just buy a new/used one on the market at that time, whatever the going rate is at that time. It'll be lower than now.
