If the GX7 is just as good as either of these two camera, i'll just keep it, but i'm basically looking for a reason to upgrade and just play with a new camera.
From what i've read I like that the Sony's sensor is basically full frame (???) but dislike that there's not touch screen so I feel like changing the focal point would be a pain in the ass.
On the NX500 side, I like their reverse sensor engineering which does really well in low-light? (don't remember exactly what it was but think I read something along those lines)

Before anything, a vote of other members' opinion could not/and should never represent what you should do. Everyone has their own preference, way of application etc and the money is yours. Like my experience on GM1/5. They are excellent M43 camera, tiny and lightweight fulfilling every original goal of M43, as powerful as most mid-range dslrs, and many members like them a lot. But having all enthusiasm and went into Panny's showroom for a test (looking for a backup), I was terribly disappointed. It is too small that my small hand/fingers didn't know how to control it them like GX7.... Good camera but just not my cup of tea.
Except for a few discourage reading on early models reviews of Samsung, and looking at its derivation to use apps, had no interest on following its development anymore. Can't comment on it. Just know their prices are fallen incredibly fast after launched ...
A6000 is not a bad choice and it is the first NEX member offering fast AFS as M43. And its PDAF on sensor making it be one of the fastest AF tracking (only in good light) when it was launched (now new M43 models, unluckily not GX7, could perform close to it). Except for a better evf (GX7 had sadly selected not the best one), A6000 doesn't offer much than GX7 IMHO.
Finally, do you aware Samsung and A6000 are all APSC and there is only a merely 1/3 stop advantage over M43? For that small benefit you have to carry large APSC lenses and worse still, there are few native NEX lenses. You might need to use huge FF Sony lenses on a not small itself adapter just to make everything larger and heavier! When talking about better IQ lenses, you might also have to use the expansive Zeiss lenses whereas there are a lot of relatively much cheaper native M43 lenses from Oly and Panny/Leica to choose....
BTW, FF mirrorless of Sony is its A7 series (latest A7SII, could AF at low light as -4ev, same as all latest Panny including GX7, A6000 can't so would hunt in low light AF). Not NEX series.
If looking for a real upgrade and video is not your interest, why not GX8/EM1 or G7 or EM5II, EM10II is another option but likely eq to GX7's class. The more complicated learning curve of Oly menu surely would give you a long busy time. And you could keep on using the existing lenses you have....
Beware GAS. Concentrate on improving our shooting technique and discover the interest of photographing, not gear buying....
Master could turn anything into magic, not the best gear. Just my 2 cents.
I own representative cameras from three of these makers; Sony, Olympus & Samsung.
The Samsung is the class act in some ways, inheriting the 28mp BSI sensor from the NX1. But no EVF.
The A6000 cannot compare to the others for features, build and quantity of APS-C sized lenses. But it has the fastest CAF and tracking, and very low cost.
The M43 entries have the fastest SF advantage, especially in low light, and enormous technical advances/features and choice of lenses.
