As stated in the OP, even though I shoot JPEGs over the first 6 months with a new camera, I do use raw for critical work. Color is a matter of taste, and I could imagine your preference is to cooler tones based on my tests of the output from my NX1 to be to the cool blue/aqua side. (I wrote about it here  as part of a thread I posted 6 months ago with my first impressions of the NX1). This of course also may not be the same with your camera, negating my assumption of your tastes. I am used to Canon color, so my taste leans more to warmer tones (I preferred warm Kodachrome to cool Ektachrome in my film days), and as also stated in the OP, I avoid AWB in bright sunlight JPEGs to avoid this blue/aqua caste.

For the critical work in raw though, I have created custom color profiles for each of my NX lenses (16-50S, 50-150S and 60 Macro) for both outdoor and indoor (tungsten light) shoots. These give me results most comparable to my tastes. Plus I always have my ColorChecker Passport in my camera case for when the light may be really difficult. Changing colors in post can sometimes be a tedious exercise, so having the profiles makes it much easier to get it right the first time.

One thing about the profiles though is that they do not work on Samsung raw files, so the raws must be converted to DNGs. Luckily, Samsung's converter software does a good, fast job of this.
