Are you using the single center AF point?  If you are, there is an exposure bias built-in (as far as I understand).  I'm not sure how to get around that.  If someone knows, it would be good to hear.  So if you focus on the white flower or the black/gray/brown insect the camera will meter it differently.  I've gotten very nice photos up to ISO5000 with my Canon T3i (600D) camera and the Tamron 150-600mm lens.  You all that are regular on this forum should have seen them on the Show Your Snaps thread.  If I get nice ISO6400 photos it's because there's a great deal of light, but generally I like to avoid ISO6400.  But I set my maximum ISO level to 6400, because I would rather have some noise than a blurry photo.
