I've been trying to find out how the GX7 displays over/under exposure in the evf. I know the em10 has blinkies that flash and the GX7 doesn't
Hi,
Are you referring to Reviewing what you just photographed?
If so: You get the blinkies in the GX7 with Highlight set to ON in the Custom Menu.

No I was meaning before taking the photo, Richard. From my searching it seems there's no highlight warning like Albert said.
Do you use constant preview? If so do you find it accurate when compared to the photo you take?
Richard had excellent explanation.
Might I just add that a lot of people might have misunderstood the application of live preview. To certain degree we may see the color etc of the scene, but could it be same as the final output like graduation, real luminous of color etc it should better be confirmed on after shot review. Because at the end it might still be a big task for the CPU to calculate and stimulate how an image would look like under the instant changing parameters. Wishing further improvement in hardware power might perfect it soon.
Currently, what a preview giving us is likely the exposure condition (too light/dark), and light distribution (would the face of model be well exposed etc) during setting of parameters. Having zebra warning in G7 etc would be good, but from the preview together with hints from histogram we could tell where would has highlight or shadow clipping. These sort of visual guideline can guide us to see and adjust. By a bit understanding on EC, like -1/3ev might increase color saturation or +1/3ev would soften the scene etc would yield sometime to our need.
Sometimes there were complaint on preview not accurate (compare to captured image) is of some sort of wrong expectation. More appropriate to treat it as an exposure guide.
