I can get a Fuji XA1 with the 16-50 for 299€. I have the XE1 and XT1. Am I missing something special by not having the XA1, like better fine detail for landscapes with its Bayer sensor?

Yes.
You already have a nice stable of cameras. Do you really need another?
So, is it just G.A.S. or is it a real need that your other cameras can't fulfill?
Good luck whatever you decide to do.

No GAS. I was wondering about the relative merits of the Bayer sensor for landscapes.
I would get in a split second a Fuji camera with fast AF. I feel frustrated when I get many portraits out of focus because the person being photographed was nervous and moving rapidly.

If fast AF is a concern, don't add additional Fuji cameras since you already have the fastest. As a matter of fact, I'd recommend putting your XE1 in a box for a while in order to master your use of the T1's AF capabilities and interface. Even without "mastering" it, I rarely miss focus on portraits taken with the T1. The trick is in knowing when to use which modes, when to press the shutter and lock focus, etc. With the addition of new AF modes, it becomes quite complicated and what works for one photographer may not match another's shooting style, so it is good to stick with one machine and discover what works for you.
Buy the A1 if you like tinkering with new gear or genuinely want something smaller. Any image quality gain in landscapes applies only to very large prints. Some like the colors better; some don't. A part of me enjoys playing with new toys, but the smarter part says I should just shoot more with my excellent T1. I haven't begun to maximize what I can get out of it. The limiting factor in my photography is not my equipment; it's me.
