So, I got my new NX1, and it's awesome, but one thing I find annoying is in aperture mode, the shutter speed is so low. When I had the nx300 it was faster, it's hard to handhold at 1/10 even with the OIS. Often the main object is sharp, but the rest is just blurred, looks bad

Do I really need to use manual mode, or is there any way I can enable minimum shutter speed for A mode?

Of course there's an explicit setting "Minimum Shutter Speed" which does exactly what you want.

You can set it at an absolute value (let's say 1/400s) or even linked to focal length. In this last option you can make it faster or slower in 5 different steps.

This setting can be also binded to a custom button. In fact I have it assigned to Preview one.

I mostly shoot in A. Although lately I've started shooting in M with Auto ISO.

(Do you know you do have even EV setting in M? I recently discovered it and it's great. I set aperture and time and let the camera adjust ISO. And I can even tweak EV in order to get an Exposure-to-the-right one if the default metering does not please me.)
