I also have been to all three parks, and shot only with a Tamron 17-50 with a Canon XTi.  I was satisfied with this most of the time.  I sometimes wished I had a wider angle capability, not for landscapes (as others have said, a stitched panoramic is frequently more effective), but to be able to take in a wider field of view from a point where I simply could not move back enough to capture all the elements of the image in front of me.  A short telephoto might be helpful to isolate some scenery elements.  Seldom wanted a long telephoto, and certainly didnt' want to carry the bulk and weight of one on our walks.  I would leave the 28-75 at home, and either bring your 12-24 or buy/rent another lighter wide angle zoom.  Definitely bring polarizer filters and hoods, at least for the 18-55 you have.
