Dynamic Range and Colour Depth on Canons - any tips for improving?

Hi everyone.

I'm new to photography and this forum.

I have a Canon 600D and I'm more than happy with it, then again I never had anything to compare it with.

I recently started reading many reviews, opinions, tests etc about how ridiculously better Sony sensors used in Nikon cameras are. For example it seems that an entry level D3300 seems to have a much better sensor than a 7D Mark II. I'm not really here to discuss the validity of these tests, how important or unimportant they might be etc.

My question is this: what can we, Canon users, do to improve the quality of our images in this regard? Obviously shooting in brackets and merging into HDR comes to mind but is not always feasible.

What would you guys recommend as a possible solution for improving the Colour Depth and Dynamic Range on your photos? I was thinking about areas such as picture settings in a camera as well as techniques for post processing. I use Photoshop and/or Lightroom.

Also going back to those differences in performance of sensors: how big and noticeable are they really, especially for someone who is an amateur, barely a step above "holiday snaps"?

And finally: in case I wanted to upgrade my Canon 600D without going overboard, what would you recommend? Cameras like 5D or even 6D will be out of my financial reach for some time.
