Sure you can take static head shots with a XT. Basically you only have a center point AF system on all current Rebels'.

The sensor is just one small part in a camera, You also need good a good AF and metering system.

While it's not in the 1 series capability the upper end rebels are more than fine. they are just as full featured as the xxD series was with the 40-50D with the exception of ergonomics and build, and many a pro used those successfully.
