It's totally related. The sharpness of what's in focus gives a greater range and depth to the juxapostion of the background.

To attempt to match the 75mm, the 50mm sony would need to get in closer (deeper perspective), be wide open, where that lens is soft.

That gives us two things., less contrast between subject and background and a less flattering look.

This problem is confounded on a crop sensor where the better 50mm primes are made for full frame.

You still have not said a word as to why the 85 is more 'interesting'. You just stated your preference.

You mentioned street photography but we are talking portraiture, specifically the OP is interested in amount of blur and the compression of a telephoto vantage point helps a lot with that.

You can get closer with the 50mm, but if you frame the subject 1:1 the 75mm will compress the background due to vantage point, generally enhancing the sparsity of background blur
