I read that some complain about micro four thirds as looking noisy and digital and from I have seen this could very well be due to over sharpening amplifying those problems. If I start with RAW files I can get very similar results as with my Nikon FX camera.

If I shot jpg stills with my GX7 I would turn NR to -5, sharp to -2 and +1 Sat with the Natural style or 0 Sat with Standard style.  I would also warm up to taste as you already discovered.  Not sure about the GH4 and I don't do video so take this with a grain of salt.  And, as others have said, adjust away until you get the output you want.
