Given enough light, why prefer high ISO instead of slower shutter or larger aperture?

I'm a beginner on photography with MFT system, this might be a very dumb question, I'm reading this website:

For GX7 photos, and saw a few photos (e.g. the photo with a red truck, 1/160 secs, F5.0, ISO 320), the settings should make the light meter correct, and I do understand that F5.0 might provide better image than the widest F2.8, but isn't higher ISO increasing noise in the image and we should keep it as low as possible? Using 1/80 secs for example, might be able to lower the ISO to 200, then what's the purpose of using higher ISO?
