I don't see how stabilization would help with rolling shutter.

Rolling shutter is due to panning movement of a camera with respect to the subject, as a function of the speed of data readout from the chip. If your panning is slowed, you can reduce the effect. If panning is slowed to the point of being stationary, then there is no observable rolling shutter effect.

Stabilization reduces jitter, but would not affect readout speed from the chip during panning. Unless there is global shutter for instantaneous readout of all data, rolling shutter will always be present, but may not be bothersome. Again, it is as an interaction between the speed of panning and the speed of data retrieval from the chip (the faster the data is read out, the faster can be your panning).
