t5i windows too blue. Manual HDR backlight control?

I am using a T5i or 700D.

I have been taking pictures of buildings and the window reflections of blue sky on every picture turned out too blue. For some reason the t5i enhances the blue reflection, even on different white balance modes. The saturation is in the middle, so it's just the color blue that's being saturated. If I shift the RGB 2D graph thing towards the red side(opposite of blue), then the slightly red things gets too red. Is there a way to fix this by toning down only the blue?

Another problem is that when I take pictures with high contrast between light and shadow, the pictures turn out too contrasted even though I have set contrast to the lowest. So I have to set the ISO and shutter speed to take a picture with low shutter speed and high ISO to capture the color and values in the shadows and then another photo with high shutter speed and low ISO to capture the lights. Is there a manual HDR backlight control that I can do to take only one photo? I am aware of the automatic HDR backlight control that takes 3 shots and the camera selects the "best one", but is there a manual method?
