Yes, the image in an IR-converted camera can be seen and adjusted more-or-less  as you can with a normal camera.   By adjusting the w/b you can either see it in red or in black-and- white.   Then, in Photoshop, you can do a lot by going into Adjustments-Channel Mix and swapping the values for Red and Blue Channels.   There is a great deal of info to be found at www.lifepixel.com.   Answers to many of your processing questions are probably to be found in the Tutorials section of the site.
