Sure, it's possible. Shooting with a single prime is possible, but why would you want to? Weddings are all full of protocol, egos, expense and angst for the participants and guests. The more options the photog has, the better. Zooms provide many more options, and good zooms also provide high IQ (at least high enough for weddings — where you shoot everything from wide to tele and some macro).

BTW: as some have pointed out, prior to digital, many wedding photogs shot TLRs, with a single focal length. If I remember correctly, what was included in a standard wedding package, back in the day, came nowhere close to the proofs/albums/options delivered, today.
