I used to shoot weddings with a Bronica MF camera, with 1 prime lens. So did many many other photographers (not that long ago THE wedding camera was the Rolleiflex TLR).

Yes it absolutely can be done.

However, things have changed, and the 'reportage' style of photography is very fashionable today, and people just expect a lot more photos as part of their package than before. A fast zoom is simply much more versatile and convenient, as well as allowing you to work much more quickly.

That said, I know of a photographer who uses a 50mm prime for nearly all of his wedding work - it's his style and his customers choose him for it.
