A half-press of the shutter button focuses on the subject.  Then pressing the rest of the way activates the shutter to take the picture.

If you keep your finger on the shutter while it is half-pressed, you can recompose the picture without losing the focus, and then finish pressing the shutter to take the picture. This means you don't move yourself, or the focus wouldn't be accurate. This method is handy for images where (for example) you have half-pressed to focus on a subject, (person/dog/object),  with a landscape, building, etc. in the background, and you want the subject to be off center.  I use this about 100% of the time in my grab shots, or in most instances where I want the subject not to be in the center of the composition.
