Very Low Light Shot and SLT?

Whats a good way to do it? For something like shooting starry nights and stuff, I can't see much of anything through either EVF or the LCD screen since the noise just over powers anything. Is it really just aim, set the aperture to high F number(11+?) and set the lens to infinite and hope for the best?
This shot is sorta related and with a flashlight helping MF it sorta get the car in focus, but later that night trying to shoot the stars were not as successful...granted I think my attempt were mostly with too much ISO and not enough stop down.
Also can you use the Playmemories App to do bulb exposure?
