First of all, shoot RAW - this is the only way to adjust things without destructing the data (i.e., with RAW you can always decide after the fact whether you need more or less of contrast or sharpness or this or that)

Secondly, sharpness (much like contrast and tonal adjustment overall) are directly related to:

a) your personal photographic vision
b) the kind of scene in question
