Are the centre points recommended over the outliers because of the cross types? In other words, if I want the dog more toward the side of the frame, for the sake of autofocus accuracy I use the centre and then crop later?

The center points are among the most accurate, although some of the outer points are also very accurate.  I think the answer really depends on your shooting style.

For action photography, like a dog running toward me where I'm constantly zooming as the dog approaches, I tend to shoot a little wide.  Easier to keep the AF point over the dog, and also ensures that the dog doesn't get ahead of me.  And then I crop later to give me the framing I want.

But if you're doing your cropping in camera--e.g. shooting jpegs--then there's no reason you couldn't use one of the outer points.

I recommend you do some experimenting and see what works for you.
